Turkish bagels -Simits
Ingredients
Makes: 6 to 8 simits
- 310g plain flour
- 5g instant yeast
- 1 teaspoon salt (should be reduced, too salty)
- 1 teaspoon sugar
- 150 to 200ml warm water, as needed
- 120ml hot water
- 120ml black treacle or molasses (honey works too)
- sesame seeds

1. put flour, yeast, salt, sugar together in a bowl and add in warm water to make a dough
2. leave the dough to rise for 1 hr (this is different from the receipe)
3. divide the dough in to 6 small portion
4. roll them - form the ring - dip in the mixture of water+black treacle/honey/molasses - roll in sesame sea :D
5. let them sit for 30 mins before baking them at 220C for 10-15 mins.
