Let's Make delicious cookies!

Soft black sugar + mashmallow coockies

black sugar cookies  

※Apart from being soft itself, the little black sugar bits add chewy texture to the coockies.

This recipe makes 12 cookies (If you make them big :D)
Measurement: US cup 

  • 2 cups all purpose flour
  • 1 Tbsp cornstarch
  • 1 tsp baking soda (or 2.5 tsp baking powder)
  • a pinch of salt 
  • ¾ cup butter, room temperature
  • ¾ cup Taiwanese black sugar (in little chunks)
  • ¼cup granulated sugar (other white sugar should be fine as well)
  • 1 egg
  • 1 tsp vanilla extract (if it's fresh vanilla, it probably should be heated with butter?)
  • Some marshmallows

 

Instructions

1. Preheat oven to 170°C - 180°C (Depending on your oven, my oven usually is hotter than others so I put 170°C)

2. Line baking sheet(s) with parchment paper, set aside

3. In a bowl whisk together flour, cornstarch, baking soda and salt. Set aside.

4. Mix butter and both sugars together. When they come together and then add in egg and vanilla extract. Mix until incorporated, scraping sides when necessary.

5. Little by little, add in flour to the mixture until dough comes together.(it will be like a more humid version of bread dough but it is not being elastic. Like it doesn't bounce back when you press it.)

6. Stir in marshmallows (or you may add the marshmallows when you roll the cookie dough)

7. distribute the dough into small portion and roll them in to little balls. Put them in the baking tray and give them a press to make them into the shape of cookies.

8. bake for 15 minutes until the edges are just golden. They will be dry if they're overbaked.

9. Remove from oven, let cool on baking sheet for 3 minutes (be careful, they are very soft at this point), and then transfer to wire rack to finish cooling.  The surface is soft when it just come out of the oven but the cookies shall become harder after it cools down. Just leave them for a while.
